Serves 6-8 l Prep Time 30 minutes l Cooking Time 40 minutes
INGREDIENTS
CRUMBE
150g butter
150g plain flour
50g icing sugar
1 tsp ground cinnamon
pinck salt
APPLE FILLING
Ingredient A
1 tbsp cornflour
1 tbsp water
Ingredient B
3 apples peeled and diced
2 tbsp water
50g castor sugar
1 tsp cinnamon powder
BROWNIE
90g melted butter
80g castor sugar
1 egg (lightly beaten)
60g walnut chopped
1/4 tsp salt
1/2 tsp baking powder
160g plain flour
1/2 tsp bicarbonate powder
1 tsp nutmeg powder
3 tbsp cocoa powder
PREPARATION
CRUMBLE
- With fingertips, mix all the ingredients until mixture comes together. Cling wrap and chill.
- Mix ingredients A and leave aside.
- In a saucepan caramelise sugar and add in the apples and water. Cook till the apples are slightly tender, then add in ingredients A and cook till mixture thickens.
- In a bowl mix the melted butter, sugar and egg. Fold in the cooled apple filling, walnuts and mix well.
- Gently fold in the dry ingredients and pour the batter into a lined 9x9x2 inch tray. Lastly sprinkle the crumble on top of the brownie and bake it at 180ûC for 30-35 minutes.
